Chicken 65 | How to make Chicken 65

South Indian Style of preparation where chicken is first marinated in minimal spices, deep fried and then cooked and coated in yogurt and infused with flavors of curry leaves and green chilies.

Serves 4
Preparation Time: 1 hour for marinating
Cooking Time: 30 to 40 minutes

Ingredients:

  •   500 grams boneless chicken
  •   2 tablespoon cornflour
  •   1 tablespoon plain flour (Maida)
  •   2 teaspoon soy sauce
  •   2 teaspoon ginger and garlic paste
  •   2 teaspoon red chili powder
  •   1 teaspoon lemon juice
  •   1/2 teaspoon white vinegar
  •   1 egg
  •   1/2 teaspoon salt
  •   2 tablespoon yogurt
  •   2 teaspoon red chili powder or Tikka masala powder (for the sauce)
  •   Pinch of orange red food color (optional)
  •   1/4 cup curry leaves
  •   10 green chilies whole with stem (put a small slit to avoid spluttering in oil)
  •   1 cup vegetable oil for deep frying

 Instructions:

  1. Cut chicken into bite size cubes.
  2. Combine 2 tablespoon cornflour, 1 tablespoon plain flour, 2 teaspoon soy sauce, 2 teaspoon ginger garlic paste, 2 teaspoon red chili powder, 1 teaspoon lemon juice, 1/2 teaspoon white vinegar, 1 egg and salt for marinating in a glass bowl, add chicken pieces and mix well. Set aside in the refrigerator for 1 hour.
  3. Heat oil for deep frying and fry chicken pieces till done and keep aside.
  4. Heat some oil in a pan and add curry leaves and whole green chilies for few seconds. Remove from the pan.
  5. In the same pan add yogurt mixed with red chili powder or tikka masala powder and food color. (add less salt as tikka masala already has salt in it)
  6. When yogurt starts bubbling add chicken pieces to it and cook till yogurt is dry and chicken is well coated. This will take about 4 to 5 minutes.
  7. Turn off the heat and add fried curry leaves and green chilies.
  8. Serve hot as snacks or as a side dish.

    1. If you do not have tikka masala powder you can add just red chili powder . Tikka masala powder to be added to yogurt
