Bread and Chicken Muffins








This is a breakfast dish wherein you can prepare the filling the day before. Next morning all you have to do is just stuff the filling and bake. Do not worry if the slices break while stuffing, just try to cover the moulds some how. I have prepared this dish just once and the first time itself it was a big hit. Original recipe is by Ruqayya Abbas.

Serving Size: 5 to 6 person
Preparation time:15 minutes
Baking time: 30 minutes (assembling & baking)

Ingredients:

  • 12 slices of bread
  • 1 cup grated cheddar cheese

For Stuffing:

  • 2 tbsp butter
  • 2 tbsp Plain flour
  • 1 tsp chili flakes
  • 1/4 tsp crushed black pepper
  • 1/4 tsp oregano
  • 2 cups warm milk
  • 1/2 cup corn (boiled/can)
  • 1 cup boiled & shredded chicken
  • 1/4 cup chopped and cooked mushrooms
  • Salt to taste
  • 1 tbsp oil
Method:
  1. To make the filling: 

    Heat a saucepan add butter and oil. 
  2. Then add plain flour and roast well till it slightly changes colour. 
  3. Now add chili flakes, black pepper and oregano. 
  4. Slowly add milk and keep stirring with an egg beater so that no lumps are formed. 
  5. When the mixture starts to thicken add chicken, mushroom & corn)
  6. Remove from heat and cool. 

For Bread Muffins:

  1. Preheat oven to 150 degrees C.
  2. Take a cup cake baking tray and grease with oil. 
  3. Take each bread slice, remove the sides and flatten the slices with a rolling pin (bhelan). 
  4. Stuff each slice into the baking tray and brush them with some oil. 
  5. Toast the empty bread cases in oven for 10 min at 150 degrees C. 
  6. Remove the baking tray from oven and stuff the toasted bread cases with the prepared chicken filling half way and sprinkle cheese, some chili flakes on top and bake again for 15 min in same temperature or till the cheese melts.
