Chinese chicken noodles


I always like to have chinese food in a restaurant. But the plus point in cooking at home is that oil and spices are fully in our control. Even though the restaurant effect cannot be created at home but we can be sure to have a healthy meal. Preparing chinese noodles is not a big deal but cooking with right timing and right blend of sauces can help in creating that perfect dish we see in restaurant. Here is a simple recipe for preparing noodles with a bit of my personal touch.

You will need:

1 cup finely chopped boneless chicken
1 packet egg noodles ( 2 serving pack)
5 tbsp oil
1 tbsp chopped ginger
1 tbsp chopped garlic
1 tbsp chopped green chillies
1 cup chopped cabbage
1 cup juliened carrot
1 cup juliened capsicum
1 cup chopped springonion
1 chicken stock cube
1 tbsp soya sauce
1 tbsp chilli sauce
1 tbsp vinegar
1 tbsp blach pepper crushed
1 tsp sesame oil
1 tsp sugar
Pinch of MSG ( optional)
salt to taste

Method:
1) Boil egg noodles in boiling and salted water for 7 min. Drain the water and immediatly pour cold water over it sprinkle oil and set aside covered.
2) Heat oil and add chopped ginger,garlic and green chillies. Stir till aromatic and before it changes colour add chopped chicken and cook along with salt, pepper and chicken stock cube. Cook for 5 min till chicken is done.
3) Now add all the chopped vegetables except for spring onion and stir fry on high heat for 2 to 3 min . Add all the sauces, sugar, vinegar , msg and spring onion.
4) At this point you can keep both noodles and chicken and veg stir fry seperately. Just before serving take a small portion of chicken mixture and small part of noodles , stir fry on high heat, sprinkle sesame oil and serve individually. In case if you have a big wok then you can fry all of them together and serve.

Tips : Keep all the ingredients chopped and all sauces ready on table before starting to cook.
