Penne polo e curry ( Pasta in creamy sauce)





This recipe is different from the normal white sauce pasta. Cream being the main ingredient makes it unique and gives an authentic Italian flavor. First time I tasted this pasta dish in a restaurant called Bricco Pizza & Pasta. What I liked about this dish is its simplicity and light flavors. Take care not to over cook the pasta and always leave it al dente (pasta should be cooked just till it is 80 % done).






Ingredients:

  • 2 cups pasta (Penne)
  • 1 cup boneless chicken cubed
  • 1/2 cup red capsicum (optional)
  • 1/2 cup green capsicum
  • 8-10 basil leaves (1/2 tsp dried basil leaves)
  • 1 tbsp curry powder (or 
  • salt to taste
  • 3/4 cup cream
  • 1/4 cup milk
  • 2 tbsp butter



Method:

1) Boil pasta in salted water till al dente (remove pasta when it slightly sticks to teeth). Strain and set aside covered.



2) Heat butter and add chicken. Cook chicken with salt till done. Then add capsicum, basil leaves, curry powder and cook for sometime.
3) Add cream, mix well and check the seasoning. Cook for 2 min with lid on low flame.




3) Now add cooked pasta and stir well till well combined with other ingredients. Always use a wide and big size pan so that stirring is easy without breaking the pasta.


Tips: 

  • If you want more spicy add more curry powder.
  • If pasta dries out too much after adding cream then add some water in which pasta was cooked.
  • Keep pasta and sauce separately. Just before serving add pasta to sauce on medium heat and stir well.
  • In case if you do not have basil, can use any other herb like dry oregano or fresh coriander leaves.
  • Can also add mushrooms.
