Nizami Veg Seekh Kabab


 
You will need:
 
 
2 potatoes boiled and mashed
1 carrot grated
1 cup finely chopped cabbage
1 capsicum finely chopped
1 onion chopped
4 to 5 big size garlic cloves chopped
2 to 3 green chilies chopped
1 tbsp lemon juice
1 tsp amchur powder
1/2 tsp garam masala powder
1 tsp roasted cumin powder
1/2 tsp black pepper powder
1/2 tsp black salt
Salt to taste
2 tbsp cashew nut powder
3 tbsp grated Cheddar cheese
3 tbsp  roasted Chana Dal powder
Oil for frying
 
 

Method:

Heat oil in a sauce pan and fry garlic, green chilies and onion till onion turns light brown. Add cabbage, carrot, capsicum and stir well on high heat for 3 min. Then add lemon juice, amchur, garam masala powder, cumin powder,black pepper, black salt and salt . Cook for a min , set aside and let it cool.

In a large mixing bowl combine mashed potato, cooked veggies, cheese, cashew nut powder and chana dal powder and  mix well. Check the seasoning and adjust accordingly. Refrigerate for 30 min. Take a spoonful of mixture on your palms and shape them into seekh and insert a wooden skewer through it. Shallow fry the kabobs on medium low heat on a non stick pan till golden on all sides. Serve hot with green chutney.

Serves 4 as a snack
Serves 6 to 7 as a side dish

Cooking time: 1 hr 15 min.

Note: The mixture should not be too soft as it will be difficult to handle on the pan. If mixture is too soft then add some bread crumbs to make it stiff.
You can also give them a cutlet shape....which will be easier to fry.
