Vegetable Upma (semolina cooked with vegetables)





 You will need:


  • 1 1/2 cup medium fine semolina
  • 3 1/2 cups water
  • 1 tsp mustard seeds 
  • 1/4 cup cashew nuts cut into half
  • 1 tsp whole cumin
  • 1 tbsp chopped ginger
  • 6 to 7 curry leaves
  • 3 green chillies slitted
  • 1 medium onion chopped
  • 1 medium tomato chopped
  • 1/2 cup carrot finely chopped
  • 1/2 cup green beans finely chopped
  • 1/2 cup fresh coriander chopped
  • 1/4 tsp turmeric
  • 1 tsp red chili powder
  • 2 tbsp lemon juice
  • 1 tsp sugar.
  • Salt to taste
  • 5 tbsp oil


Method:

  1. Take a non stick pan and dry roast the semolina on low flame for 5 min till u get a nice aroma.
  2. Heat oil in a sauce pan and add 1 tsp mustard seeds (after it stops crackling) add cashew nuts, 1 tsp whole cumin, 1 tbsp finely chopped  ginger, 6 curry leaves and 2 or 3 green chilies.
  3. Now add onion and fry only till it is soft (not to be fried much) and then add chopped tomatoes. Fry till tomatoes melt and oil separates.
  4. Now add all the vegetables and fry for a minute.
  5. Add 1/4 tsp turmeric, 1 tsp red chili powder, salt, 1 tsp sugar, 2 tbsp lemon juice and stir well.
  6. Now add water and bring to boil. Check the seasoning (salt) by tasting the water.
  7. Reduce flame, and slowly little by little add roasted semolina. Keep stirring while adding as to avoid any lumps.
  8. Finally add fresh coriander leaves, stir and place lid .
  9. Cook on low flame for 5 min and the switch off the gas.
  10. Let  the upma stand for few more min before you open the lid.
  11. Serve hot.


 Serves  4 to 5.
Preparation time: 10 min. (while roasting semolina you can chop the veggies)
Cooking time : 20 min
Dish is ready in 30 min.
