Mango Cheese Cake


You will need:

For the Base: (mix together)

10 digestive biscuits
80 gms butter melted

For the Cake:

1 cup Mango puree (without water added)
200 gms cream cheese ( Philadelphia) or any cream cheese
1 tbsp. gelatin powder dissolved in 3 tbsp. hot water
3/4 cup thick cream (1 tin Nestle Cream)
1/4 tin condensed milk (big tin of 395 gms)
1 sachet dream whip powder whipped with half cup chilled milk
Pinch of yellow colour

Method:

  •  For preparing the base, melt the butter and add it to the crushed biscuits. Set the biscuit crumbs in a spring form cake tin or any of your serving dish. Press the mixture evenly and tightly with help of a back of a glass and refrigerate till firm.
  •  In a separate bowl whip cream cheese, condensed milk, nestle cream, colour, mango puree and dissolved gelatin together.
  • Now slowly without using the hand beater add in the whipped cream to the cheese mixture, this should be done with a ladle or big spoon and mix gently.
  • Pour this filling over the prepared biscuit base and set in the refrigerator for minimum 4 to 5 hrs.





Tips:
  1. Place the cheese cake to set in the coldest part of the fridge.
  2. If you don't have dream whip powder, whip 1 cup chilled cream for sometime and then add 3 tbsp. icing sugar and keep whipping till peaks are formed.
  3. Gelatin should be completely dissolved in hot water and cooled before adding to the cheese mixture or else the cake will not set.
  4. If the cream is thin and flowy the cake will not set.
  5. Mango puree should not be kept for long in room temperature as it will oxidise and change colour.
  6. Taste the cheese before adding and avoid cheese which is too salty.

  1. Looks yummy shehnaz.....cream cheese is which 1....I had made of kraft and it turned so salty...yeh picture dekhke feellike makin itrite away

  2. U can use cheese triangles which is not salty....but I always use Philadelphia cheese.

    1. I have used halal gelatine. If you want you can make this cheesecake without gelatin. Just set the dessert in the serving bowls so that you do not have to unmould it
