Dhabe Ki Sabzi ~ Spicy Stir Fried Vegetables



Mixed Vegetable Curry

 Spicy Indian style preparation of mixed vegetables ideal to be served with naan, roti or steamed rice.


Serves 4



Ingredients:

  • 1 cup florets of cauliflower (deep fried)
  • 1 cup green capsicum cut into cubes
  • 1 cup mushrooms cut into quarters
  • 1 cup of peeled and cubed potatoes (deep fried)
  • 4 to 5 baby corn cut diagonally into small pieces (deep fried)
  • 50 gms Paneer cubed and shallow fried (optional)
  • 1 cup onion cut into cubes.
For the masala:
  • 1 cup finely chopped onion
  • 1 cup finely chopped tomatoes
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 green chilies finely chopped
  • 1 cube of vegetable stock (optional)
  • 1 tbsp tomato sauce
  • 2 tbsp whisked yogurt
  • 2 tsp of red chili powder
  • 1 tsp of coriander powder
  • 1 tsp of cumin powder
  • 1/4 tsp of turmeric powder
  • Pinch of garam masala powder
  • 1 tbsp Kasoori methi
  • 1 cup chopped coriander leaves.
  • 1 tbsp lemon juice
  • Salt to taste
  • 1/4 cup fresh cream whisked
  • 4 to 5 curry leaves
  • 1 tsp whole cumin.
  • Oil for cooking


Instructions:

  1. Heat 2 tbsp of oil and shallow fry capsicum, onion cubes, paneer and baby corns, each of them separately and set aside.
  2. In the same pan add 5 tbsp of oil and add whole cumin, curry leaves and finely chopped onion. Fry onions till it become soft and light golden.
  3. Then add ginger and garlic paste, green chilies and tomatoes. Fry on low heat till tomatoes are full cooked and oil has separated.
  4. Now add spices like red chili powder, cumin powder, coriander powder, turmeric, kasoori methi, vegetable stock.
  5. Slowly roast the masala on low flame by stirring constantly till the raw smell disappears. If the gravy sticks to the pan, add few drops of water and keep stirring. This will take about 5 minutes.
  6. Add remaining ingredients like yogurt, tomato sauce, lemon juice, cream, salt and garam masala powder. Cook for 2 minutes and finally add all the prepared vegetables (precooked).
  7. Add 1/2 cup of water, stir well and check the seasoning. Place the lid and cook for 5 minutes on low heat. 
  8. Garnish with chopped coriander leaves and serve hot with Rice or Roti.
