Tomato Cheese & Chutney Sandwich

A very easy and simple sandwich with few ingredients makes it a kind of comfort food for many. Ideal sandwich to be packed in lunch box especially for those kids who are too fussy about eating. It's a known fact and with my own experience as a mother, kids prefer simple things in their lunch box.

Ingredients:
  • 2 slices of bread
  • 1 firm and plump tomato
  • 1 cheese slice
  • 1 tbsp of Mayonnaise
  • 2 tbsp of Mint Chutney
Method:
  1. Spread mayonnaise on 1 slice of the bread.
  2. Place a slice of tomato and cheese.
  3. Spread chutney on the other slice of bread and place it over the tomato & cheese.
  4. Cut the sandwich into 4 pieces.

Mint Chutney (grind together)

  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • 2 green chillies
  • 1 tsp lemon juice
  • Salt
  • 1 cup mint leaves
  • 1 cup green coriander
  • 1 slice of bread torn into pieces

    1. I usually make a dry chutney with very little water. It can be stored in the fridge for upto 4 to 5 days. You can freeze it if you want for future use. Always use dry spoon in the chutney, that way it will remain fresh for long. Thanks for your queries.
