Baked Beans Tacos








Ingredients:


  • 1 packet of taco shells (12 pieces)
  • 1 cup grated cheddar cheese
  • 1/2 cup Jalapeno peppers pickled / fresh
  • 1 small tin of Baked Beans (as required)
  • 1/2 cup sour cream
  • 3 tbsp of chili flakes ( for garnishing)



For Salsa:

  • 1 cup chopped tomatoes
  • 1 large cucumber
  • 3 to 4 lettuce leaves
  • 1 cup cooked corn kernels ( or tinned)
  • 1 cup chopped capsicum
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • Salt to taste
  • 1 tsp black pepper 


Method:


  1. Bake the taco shells in the oven according to the instructions on the box.
  2. Place a whole lettuce leaf inside the shell. (this will keep the taco from getting soggy and makes it easy to eat)
  3. Pour a spoonful of baked bean, followed by salsa/salad, jalapenos and finally grated cheese.
  4. Top it with a tsp of sour cream and chili flakes.
Note:

In case, if the taco shells are broken then you can make it into a nacho salad by using the same ingredients mentioned above.
