Potato & Chutney Sandwich



As I had mentioned in my previous post of  Tomato Cheese & Chutney Sandwich, a very easy and simple recipe especially for those kids who are fussy about vegetables. 


Ingredients:
  • 2 slices of bread
  • 1 large potato boiled and sliced
  • 1 cheese slice
  • 1 tbsp of Mayonnaise
  • 2 tbsp of Mint Chutney
Method:
  1. Spread mayonnaise on 1 slice of the bread.
  2. Place slices of boiled potato and cheese.
  3. Spread chutney on the other slice of bread and place it over the potato & cheese.
  4. Cut the sandwich into 4 pieces.






Mint Chutney (grind together)

  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • 2 green chillies
  • 1 tsp lemon juice | or tamarind pulp
  • Salt
  • 1 cup mint leaves
  • 1 cup green coriander
  • 1 slice of bread torn into pieces
