Prawn Ghee Roast | Prawn Masala









Serves 4 

Cooking time: 30 minutes


Ingredients:

  • 1 kilogram of prawns 
  • 4 tbsp ghee
  • 8-10 fresh curry leaves
  • 1/2 chopped fresh coriander leaves 
For Marinade:
  •  4 tbsp yogurt 
  • 3/4 tsp turmeric powder
  • 1 tbsp lemon juice
  • 1 tsp black pepper powder
  • Salt to taste
For Masala Paste:
  • 10 dry red chillies
  • 2 tbsp coriander seeds
  • 2 tsp cumin seeds
  • 1 tsp peppercorns
  • 1/2 tsp fenugreek seeds
  • 7 garlic pods
  • 2 tbsp tamarind pulp
  • 5 -6 curry leaves
Method:

  1. Marinate prawns with yogurt, turmeric, lemon juice, salt and pepper for 15 minutes.
  2. Shallow fry on medium high heat for 1 or 2 minutes. Set aside. 
  3. Dry roast red chilies, coriander seeds, cumin seeds, fenugreek seeds and peppercorns. Grind to a smooth paste along with garlic, tamarind and curry leaves.
  4. Heat ghee and fry the masala for 2 minutes. (till ghee separates)
  5. Now add the fried prawns and cook for 5 minutes on low flame and if required add more salt.
  6. Garnish with fried curry leaves and chopped coriander leaves.
  7. Serve with rice or roti.

  1. this was my first recipe of ghee roast , which I only eat in restuarants, but never tried prawn ghee roast, it came out good , jazakallah khair
