Masala Egg Bun is a popular street food in cities like Mumbai. There is nothing much fancy about the recipe, it is just the style of cooking an omelet with bun. You will be amazed to see how soft the buns get when some of the whisked eggs get soaked into it. It is also popularly known as 'Disco Omelet', and I sometimes wonder who even invented this kind of a dish with such an eccentric name. You have to keep the spice level a bit high and that's the actual secret of any street style food.

There is no need to follow this recipe accurately as mine. Just feel free to prepare your own style omelet and then follow the steps in assembling the buns with egg. You can also add grated cheese after flipping over the omelet with the buns before folding it. I am sure this is going to be one of the favorite breakfast options for you and your family.

Masala Egg Bun is a street style preparation of spicy omelet along with buns and cooked together and served hot as breakfast or evening snack.

Preparation time: 10 minutes
Cooking time: 5 minutes
Total time: 15 minutes
1 cup = 250 ml capacity
Serves 1

Ingredients:

2 mini buns or pav
2 tablespoon grated cheese (optional)
1 teaspoon Kashmiri red chili powder
2 tablespoon cooking oil

For the omelet (whisk together in a bowl)
2 eggs
1 small onion finely chopped
1 small tomato finely chopped
1 green chili finely chopped
1 teaspoon black pepper powder
1/2 teaspoon Kashmiri red chili powder (mild)
1/4 teaspoon turmeric powder
1/2 teaspoon salt


Instructions:

1. Heat oil in a pan, and pour the egg mixture. Cook for 1 minute on medium heat till the base gets firm. Sprinkle some red chili powder and black pepper powder on the top.
2. Cut each bun in half and place it on the omelet with cut side down. Follow the picture given below. Again sprinkle red chili powder and some butter on the buns.
3. Carefully flip over the buns along with the omelet. And press it slightly in order to flatten the bun. Cook till the buns get crispy. Sprinkle some grated cheese if you wish over the eggs.
4. Fold the whole thing in half, so that the top side of the bun is on the top and the omelet in the center. Watch the video for the demo.
5. Serve hot.
