Egg Bun | Bun Omelet

Egg Bun is a popular street food in cities like Mumbai. Nothing much fancy about the recipe, it is just the style of cooking an omelet with bun. You will be amazed as to how soft the bun gets when some of the egg gets soaked into it and in my version I have even added some cheese. It is also popularly known as 'Disco Omlette'. You have to keep the spice level a bit high, that's the actual secret of any street food if you have noticed. There is no need to follow the recipe strictly, feel free to prepare your own style egg and just follow the procedure of assembling the bun and cheese. I promise this is going to be your best breakfast ever and a family favorite too.


  • 2 small pav or any small size soft buns
  • 2 slices of cheese or 1/2 cup grated cheddar cheese
  • 1 tsp red chili powder
  • Oil or butter for cooking 

For omelet (whisk all together in a bowl)

  • 2 eggs
  • 1 small onion sliced
  • 1 tomato finely chopped
  • 1 green chili finely chopped
  • Pinch of turmeric
  • 1/2 tsp black pepper powder
  • Salt to taste


  1. Heat oil in a pan, and pour the egg mixture. Cook for 1 minute on medium heat till the base gets firm. Sprinkle some red chili powder and black pepper powder on the top.

2.  Cut each bun into half and place it on egg with cut side down. Follow the picture given below. Again sprinkle red chili powder and some butter on the buns. 

3. Carefully flip over the buns along with the omelet. And press it slightly in order to flatten the bun. Cook till the buns get crispy. Sprinkle some grated cheese if you wish over the eggs.

4. Fold the whole thing into half, so that the top side of the bun is on the base, egg and cheese in the center.  

5. Serve hot.
