Ginger & Dates Jam






Here I am with yet another challenge from our Muslim Food Bloggers group, and this time it is not a blog. You can see here Last Month's Challenge wherein the members were assigned a blog and we could select any recipe and recreate it in our own style. It came as a surprise when I came to know that this month's challenge is an ingredient which is a complete food on its own, with the most number of nutrients present in just a small humble fruit 'Date'.

There is a never ending list of health benefits derived from this super food. To start with its laxative property and high level of soluble fibers, it helps relieve constipation. Dates contain minerals like selenium, manganese, copper and magnesium all of which contribute to healthy bone development and strength. And the impressive levels of iron present in it, makes it a dietary supplement for those who suffer from anemia. And the list goes on and on which also includes 'dates' as a home remedy for problems like allergies, diarrhea, abdominal cancer, night blindness, intoxication etc.

I would also like to take this opportunity to mention the facts about 'Dates' related to the holy Quran. In the month of Ramadan, muslims throughout the world break their day long fast with this humble fruit, the reason being that dates are very high on sugary energy and so the body is supplied with the most important nutrients which is sugar that is irreplaceable as a nutrient for the brain cells and nerves. Consuming dates also protects the fasting person from having constipation as a result of changing meals times.

In Surah Maryam of the Holy Qur’an, Allah provided Prophet Isa’s (peace be upon him) mother Maryam (peace be upon her) with fresh dates when she was experiencing discomfort and pain during the final stages of her pregnancy.“Shake the trunk of the palm toward you and fresh, ripe dates will drop down onto you.” (Surah Maryam: verse 25) 




Now back to the challenge, I wanted to do something very different with this ingredient. If you are following my blog, you must have seen my other dates related recipes like Dates Cake and Dates & Almond Drink.  I had a long list of ideas for 'Cooking With Dates' challenge but chose to prepare a jam by combining the flavor of ginger and lemon. After few attempts and testings, I have managed to develop this recipe on my own.  









Ingredients: 

  • 200 gm pitted & chopped dates (medjool)
  • 1/4 cup brown sugar
  • 1 cup water
  • 3 tbsp white vinegar
  • 1 tbsp grated ginger
  • 1 tbsp lemon juice
  • 1 tsp lemon rind
  • 1/4 tsp cinnamon powder
  • Pinch of salt
Method:
  1. Combine all of the above ingredients in a thick bottom saucepan and cook on slow flame.
  2. Keep stirring to avoid the dates mixture from sticking to the bottom. 
  3. Cook for about 20 to 30 minutes or till the water has completely dried up and dates have softened and turned pulpy.
  4. Cool the cooked jam and transfer to a sterilized and clean glass container. 
  5. Store in the refrigerator and serve with warm toast or as a dessert or ice cream topping.
