Kadhai Paneer

Paneer is my all time favorite and I can have it almost every single day. Many like to fry it before adding to the gravy. But I personally feel that frying paneer is not a good idea as it drains out its juices making paneer rubbery. If you are using a frozen packet of paneer then let it defrost completely and it should be in room temp. Place the Paneer packet in a bowl of warm water before adding to the gravy...this also makes the paneer soft.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Total Time: 35-40 minutes (approx)


250 grams paneer
1 tablespoon grated garlic
1 tablespoon grated ginger
1 teaspoon cumin seeds
1 medium size onion roughly chopped
1 medium size tomato chopped
1 small capsicum chopped into cubes
1 small onion chopped in cubes
2 green chilies chopped
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon crushed kasoori methi
1 tablespoon tomato puree +1 tbsp yogurt mixed together
1 tablespoon tomato sauce
1/4 teaspoon garam masala
1 tablespoon fresh cream
1 tablespoon chopped pudina (mint)
1 tablespoon chopped coriander
Salt to taste
3 tablespoon oil + 1 tablespoon butter


Heat oil and butter in a pan. Add cumin seeds and let it crackle.
Now add ginger and garlic and fry for few seconds till aromatic.
Then add onion along with green chilies and fry till onions are soft and pink.
Add tomatoes and cook till oil separates. Now add spices like turmeric powder, coriander powder, red chili powder, kasoori methi, a mixture of tomato puree and yogurt. Stir well and add capsicum and onion cubes. Place the lid and cook along with salt on low flame. In this dish, we don't have to add any water so try to keep the flame low. Avoid overcooking of capsicum, so accordingly open the lid and add tomato sauce, paneer cubes, and garam masala powder.
Stir well and finally add fresh cream, chopped mint and chopped coriander.
Cook for few seconds and then serve hot with roti or naan.
