Pav Bhaji





Ingredients:

1 packet of Buns (Indian Pav)
1 big potato peeled boiled and mashed
2 cups cauliflower florets boiled and mashed
1 cup carrot boiled and mashed
1 cup boiled green peas
100 grams butter stick
1 cup finely chopped onion
1 cup chopped ripe tomato
1 teaspoon grated garlic
1 green chili chopped
1 tablespoon tomato puree
3 tablespoon pav bhaji masala
1 tablespoon lemon juice
1/2 cup chopped fresh coriander
Salt


Method:

Heat 1 tbsp butter in a saucepan. Add few drops of cooking oil to prevent butter from burning. 
Now add garlic and fry for few seconds and then add onion. Fry onion until soft and pink and then add tomato. 
Fry till oil separates and then add green chili, tomato puree, pav bhaji masala. 
Cook for sometime and then add mashed vegetables along with green peas. Add salt and water to adjust the consistency (can use the water used for boiling veggies). 
After a boil add lemon juice, a big block of butter and fresh coriander. Stir well and remove from heat.
Heat a nonstick pan. Spread butter on each bun sprinkle some pav bhaji masala on the buns and fry on the pan. 
To serve on a plate keep the buns in one side and pour bhaji on the other side with freshly chopped onion and some butter on top.

Note: Pav bhaji masala can vary according to one's preference, add more of it if u want it spicy. Avoid over frying of onions and tomatoes....this makes your bhaji dry.
