Copper Chicken

I have no idea as to why this is called Copper Chicken. I assume the colour should be the reason for its name. We always try to find different ways of preparing the chicken....sometimes .....yellow. So why not try this copper one. It pairs very well with a simple daal chaawal and then if you crave for some non veg at the side. The main rule to be followed here is that pieces should be cut into small pieces, marinated well and please please do not over fry it. The secret is that it should be well cooked and juicy from inside and crispy from outside.

You will need;

500 gms chicken pieces
1 egg
1 tsp chili powder
1/2 tsp black pepper powder
Pinch of ajinomoto
3 tbsp. cornflour
Salt to taste
Pinch of yellow colour

Make a paste:

1 onion finely chopped
2 green chilies chopped
3 to 4 garlic

Method: Marinate chicken with the above mentioned ingredients for 3 to 4 hours. Deep fry and serve hot with mint chutney.

Serves 2 to 3
