Cheesy Baked Potato

This looks like a very fancy dish. Its perfect for an evening snack which is healthy, as it is not fried but baked. It's not always necessary that healthy food has to be boring. A whole potato is partially sliced and baked with a bit of butter and cheese and seasoned with salt, chili flakes and some sour cream which is optional. Just by baking this kind of potato you can experiment and try your own version. For instance, having it with some mint chutney, yogurt and chat masala powder. Or pour some Chinese or Thai sauce to give an oriental twist. Well the choice is yours, just go ahead and explore. 

Preparation time: 20 minutes
Cooking time: 20 minutes
Serves 3 to 4


  • 3 medium size whole potatoes with skin ( half boiled )
  • 4 tbsp soft butter
  • 1 cup grated cheddar cheese
  • Salt to taste
  • 2 tbsp chili flakes
  • Handful of chopped fresh coriander leaves
  • 3 tbsp of sour cream or more
  • Either you can boil the whole potatoes in a pressure cooker. Do not over the potatoes. Boil till it is just half cooked. Take a sharp knife and carefully slice them partially. The bottom portion of potato should be intact.
  • Take raw potatoes, partially slice them, sprinkle salt over the slices and steam in a steamer. Steaming works better than boiling.

  1. Preheat oven to 250 deg C.
  2. Apply the butter with help of a knife in between each slice.
  3. Sprinkle salt and grated cheese and place it on a baking tray and bake for 15 to 20 minutes or till the slices become crisp.
  4. Remove from oven and pour sour cream on each potato. Sprinkle chili flakes and chopped coriander leaves and serve hot.

Tips: To make sour cream at home just add 1 tsp lemon juice to 1 cup of cream and mix well. Can sprinkle some chat masala powder to get an Indian taste.
