Lemon & Mint Cooler

This is a very easy and refreshing drink which you can prepare in a jiffy. One of the things you will always find in my freezer section of the refrigerator, is the lemon ice cubes. I just buy lemon in bulk and extract all the juice and freeze it in an ice cube tray. Once frozen I just unmould them and store it back again in the freezer in  a zip lock bag. So now I can save a lot of time on squeezing out juice from a lemon.
There is nothing more refreshing than a chilled lemon juice, and I really don’t mind if it’s summer or winter. Good thing about this drink is that its not only refreshing but also good for digestion, may be after a heavy meal.

Preparation Time: 15 minutes
Serves : 2

  • 1 can chilled Soda ( or chilled water)
  • 4 tbsp sugar (or less)
  • 4 – 5 Ice cubes
  • Handful of mint leaves
  • 4-5 slices of fresh ginger
  • Juice of 2 lemon
  • 1/2 tsp Chat masala powder (optional)

  1. Crush together mint leaves, ginger and sugar till you get a paste.
  2. Pour crushed puree  into the serving glasses.
  3. Place ice cubes in each glass and pour chilled soda.
  4. Sprinkle with some chat masala powder and serve.
