Szechuan Hot & Sour Soup

  • 200 gms boneless chicken finely chopped
  • 2 tbsp garlic finely chopped
  • 1 tbsp soya sauce (dark)
  • 2 tbsp red chili sauce (or Chings Szechuan Sauce)
  • 1 tbsp tomato puree
  • 2 tbsp tomato sauce
  • 1 tsp brown sugar (or white sugar)
  • 1 tsp chili flakes
  • 1 tbsp white vinegar
  • 1/4 tsp black pepper powder
  • 2 tbsp cornflour dissolved in half cup water
  • Salt to taste
  • Egg white whisked (optional)
  • 1/2 cup chopped green spring onion
  • 3 cups homemade chicken stock or (dissolve 1 knorr chicken stock cube with 4 cups of water.) 

  1. Heat oil in a sauce pan and fry chopped garlic till the raw smell disappears and color changes slightly.
  2. Add finely chopped boneless chicken pieces along with salt and pepper powder and fry till chicken is well cooked.
  3. Now add soya sauce, red chili sauce, tomato puree and tomato sauce. Lower the heat, add 4 cups chicken stock and cook on low flame for 2 minutes.
  4. Add brown sugar, chili flakes and vinegar.
  5. To thicken the soup add cornflour mixture little by little till you get the consistency of your choice. 
  6. You can add beaten egg white in a thin stream and keep stirring as you add. Adding egg is optional, you can prepare soup even without it.
  7. Garnish with lots of green chopped spring onion and serve hot.
How to make chicken stock?

  • 3 to 4 chicken pieces with bones
  • 1 carrot roughly chopped
  • 1 onion roughly chopped
  • 4 garlic pods crushed
  • 1 stem of celery (optional)
  • Few stems of coriander leaves
  • 1 bay leaf
  • 1 tsp crushed black pepper
  • 1 tsp of salt
  • 4 cups of water.
  1. Combine all the ingredients in a pot and bring to a boil.
  2. Once it starts to boil, reduce the flame and cook for 20 to 25 minutes.
  3. Strain the liquid and discard the bones and other things.
  4. Pour the liquid (chicken stock) into an ice tray and place it in the freezer.
  5. Once freezed remove the stock cubes and store in zip locked plastic bags.
  6. Use it whenever required.
