Bharwan Bhindi

Serves 4
Preparation Time: 30 minutes
Cooking Time: 15 to 20 minutes


  • 400 gms ladies finger/ bhindi
For stuffing (mix together in a bowl)
  • 2 tbsp chickpea flour - roasted
  • 1/4 cup peanuts - roasted
  • 1 small onion finely minced
  • 2 tbsp finely chopped garlic
  • 3 green chilies finely chopped (or as per taste)
  • 1/4 cup chopped coriander leaves
  • 3 tbsp grated coconut
  • 1 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp roasted cumin powder
  • 3 tsp amchoor powder (dry mango)
  • Salt
  • 3 to 4 tbsp cooking oil 
For tadka (tempering)
  • 1 tsp hing powder (asafoetida)
  • 1 tsp whole cumin

  1. Wash the ladies finger, pat dry completely by wiping each of them with a cloth.
  2.  Cut of both the ends and make a slit lengthwise. (as shown in the picture below)
  3. Mix all the ingredients for stuffing in a bowl and stuff it into the ladies finger.
  4. Heat oil in a flat pan and add whole cumin. When it splutters, add hing. 
  5. Lay the stuffed lady fingers on the pan side by side. Cook for 15 to 20 minutes by rotating them so that the vegetables are evenly cooked on all sides till golden brown and crisp from outside.
  6. Serve hot with Dal and Steamed Rice.
