Avocado & Corn Salad

Avocado Garden Salad is a health and power packed dish which has most of the super foods. It is served with a low calorie salad dressing which makes it ideal as a weight loss meal.

Avocado Garden Salad

A refreshing and healthy salad which is quick and easy to prepare with the creamy texture of avocado, a slight crunch from corn kernels with a super healthy dressing of olive oil and lemon juice.

Preparation time: 15 minutes

1 cup = 250 ml capacity

Serves 2


    1 ripe avocado peeled and chopped
    1 cup cherry tomatoes chopped in halves
    1 large cucumber chopped
    2 or 3 lettuce leaves torn to bite size pieces
    1 small onion finely sliced
    1 cup corn kernels cooked or tinned
    1/2 cup chopped coriander leaves

For dressing: 

    1 tablespoon lemon juice
    2 tablespoon olive oil
    1/2 teaspoon grated garlic or 1/4 teaspoon garlic powder
    1/2 teaspoon crushed black pepper
    1/2 teaspoon paprika powder


  1. Combine all the salad ingredients in a large glass bowl and keep it refrigerated until it is served. 
  2. In a separate bowl combine all ingredients for the salad dressing and mix well. Keep refrigerated. 
  3. Just before serving, drizzle the salad dressing over the salad and serve chilled.
