While preparing this parfait and when I was busy doing the photo shoot, the bowl in which I had casually kept the washed berries caught my attention. For few minutes I was just staring at it and I got that refreshing feel and also I was tempted to just capture those rich looking berries in my camera. It was like a feast for the eyes, especially how the seeds are neatly studded all over the fruit and that rich red color just makes it more balletic. Blueberries have that rich violet color, excuse me if I am wrong as I am very poor at colors. I love to have blueberries just on its own rather than using them in any form of a dish.

Berries & Chia Seeds Parfait is a very simple and easy recipe especially for those who are more conscious of what they eat. The whole parfait is packed with berries rich in anti-oxidants, with yogurt and chia seeds. Yogurt, as we all know, is rich in calcium, proteins, and vitamins, whereas chia seeds are a good source of Omega-3 fatty acids. 

You can add a layer of granola, nuts, dry fruits, and other fresh fruits as well to this parfait and turn it into healthy breakfast or as an evening snack. I find this as a perfect meal to be had during suhoor when I am in no mood to have spicy food.

Day 29


Berries & Chia Seeds Parfait


Smooth and luscious yogurt and chia seeds parfait served with strawberries, blueberries, and banana.

Preparation time: 5 minutes
Soaking time: 60 minutes
Total time: 65 minutes
1 cup = 250 ml capacity
Serves 2

Ingredients:

1 cup chopped strawberries
1 cup blueberries
1 banana
1 cup strawberry puree
1 cup yogurt
2 tablespoon chia seeds
2 tablespoon honey
Mint leaves for garnish

Instructions:

1. Soak chia seeds in 1/4 cup water for 1 hour. Add more water if needed.
2. Take a bowl and mix yogurt, honey, and soaked chia seeds.
3. Take two large serving glasses or bowls. In each glass pour yogurt mixture, and then a layer of strawberry puree, followed by chopped banana, chopped strawberries, and blueberries. Place in the refrigerator if you like it chilled.
4. Serve as breakfast or an evening snack.
