 I had this mixed feeling after announcing my 31 Day blogging challenge early this month. I was a bit sceptical about the challenge that if I am actually able to complete it on time. So here I am with the 7th recipe of the challenge. In a way, it helped me step out of my comfort zone, get into the habit of being regular in posting recipes and also post all those easy and practicle recipes which were just lying in my drafts. My main agenda for this year is to stop procrastinating and start new sections in my blog. Apart from my own recipes, I had started the Guest series in the month of november in which I invite guest chef and ask for their contribution. You will also see menu plans and kitchen preps which will be a part of my blogging for this year.

Here comes the second sandwich recipe for this year, the first one which I had posted was Vegetable Sandwich. Scrambled Egg & Mushroom sandwich is a very convenient sandwich as there is always a good stock of eggs in the kitchen pantry and mushrooms are not very difficult to find these days. I can also call it a quick fix meal which does not take more than 20 minutes to prepare. Mushrooms can be replaced with other kind of vegetables like a green capsicum or a cabbage, the choice is all yours. It tastes equally good even with scrambled eggs on its own. Cheese gives the sandwich a nice rich and creamy taste balancing  the spices in the egg mixture.

Indian Style spicy scrambled egg sandwich with mushrooms and cheese.

Preparation time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes
1 cup = 250 ml capacity
Serves 5 (5 sandwiches)

Ingredients:

10 slices
50 grams butter
5 cheese slices (1 cup grated cheese)
Mayonnaise (optional)

For Scrambled Egg & Mushroom:
4 eggs
8 button mushrooms (finely chopped)
1 large onion chopped
1 large tomato finely chopped
2 green chilies finely chopped
1 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/4 teaspoon black pepper powder
1/4 cup chopped coriander leaves
3 tablespoon oil

Instructions:

1. In a bowl beat 4 eggs with a pinch of salt and pepper.
2. Heat oil in a non-stick pan.
3. Fry chopped onion until soft, followed by chopped tomato, chopped green chili, red chili powder, turmeric powder, salt and black pepper powder. Fry for 2 minutes.
4. Add chopped mushroom and fry until well cooked. Then add whisked egg mixture and cook on low flame and keep stirring till all the eggs get scrambled and well combined with rest of the spices. Finally, add chopped coriander leaves and mix well. This will take about 3 to 4 minutes. Remove from heat and set aside to cool down.
5. Take 2 slices of bread and spread mayonnaise evenly. Place a tablespoon of cooked egg and mushroom mixture and a slice of cheese. Place the other slice of bread on top and grill on a non-stick pan with some butter till golden and crispy on both sides.
6. Serve hot.
