We are almost a fortnight away from the month of Ramadan, a month of self-purification, detoxification, and self-control. As you must be aware that every Ramadan, I promote healthy eating habits whereas a majority of them like to binge in deep-fried and unhealthy food. 

I like to provide healthy food options which can replace the deep fried and sugary dishes. Making grilled food can be such option, where you only need to marinate the meat hours before breaking the fast and just grill it and serve it with lots of salad and flatbread.

Not only is the grilled food healthy but it is also very easy to prepare which gets cooked on its own when left in the oven attentively. Once the grilled meat is ready, it again gives us lots of choices like making a kabab roll, or shredded kabab into a nice tikka sandwich. You can also serve it on a bed of rice or on a bowl of salad.

Achari Murg Tikka is the most popular appetizer that is served in any weddings or parties. The name itself explains all about this kabab. To make achari tikka I have not used any garam masala spices. It is a bit spicy, a little bit zesty and rich with spices which include fenugreek and nigella seeds. 

Another great fact about this recipe is that now you can make your own Achari Masala Powder with ingredients that are easily available in your kitchen pantry. This Achari Masala powder is not limited to just Achari Tikka but can be readily used for curries as well.

A popular appetizer where chicken pieces are marinated in yogurt and a special blend of achari spice mix making it the most delicious and piquant barbecue dish.

Preparation time: 15 minutes
Marinating time: 60 minutes
Cooking time: 25 minutes
Total time: 30 minutes + marinating time
1 cup = 250 ml capacity
Serves 4

Ingredients:

1-kilogram boneless chicken cubes
2 tablespoon yogurt
1 tablespoon ginger & garlic paste combined
2 tablespoon achari masala powder
1 tablespoon kasoori methi (dried fenugreek leaves)
1 tablespoon lemon juice
2 teaspoon chickpea flour (besan)
1 tablespoon mustard oil (or any cooking oil)
1 teaspoon salt

Achari Masala Powder
10 dry red chilies (I used byadgi)
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon fennel seeds ( Badi Saunf)
2 teaspoon black peppercorns
1 teaspoon mustard seeds
1/2 teaspoon methi seeds (fenugreek seeds)
1/2 teaspoon nigella seeds (kalonji)
1 teaspoon black salt (kala namak)
1 teaspoon turmeric powder
2 teaspoon amchoor powder
1 teaspoon hing (asafoetida)

Instructions:

1. Achari Masala Powder: Dry roast on low flame, dry red chilies, coriander seeds, cumin seeds, fennel seeds (badi saunf), black peppercorns, mustard seeds, nigella seeds, and methi seeds for almost 2 to 3 minutes. Cool and grind to a smooth and fine powder. In a large bowl, mix together, powder from the grinder, black salt, turmeric powder, amchoor powder, hing and mix well. Store in a dry airtight glass container.
2. Marinate: In a large bowl add chicken pieces, yogurt, ginger & garlic paste, lemon juice, salt, 2 tablespoon achari masala powder, 1 tablespoon kasoori methi, 2 teaspoon chickpea flour, and 1 tablespoon mustard oil (you can substitute mustard oil with cooking oil or olive oil). Mix well and marinate the chicken pieces for minimum 1 hour or you can keep it for 3 to 4 hours.
3. Grill or Pan Fry: Preheat oven to 250 degrees C and place the chicken pieces on a skewer or just lay flat on a baking dish. Keep the baking dish close to the top flame and cook for 20 to 25 minutes (turn the pieces after 10 minutes).
5. Serve hot as a starter with Mint Chutney or wrapped in a roti as achari roll.
