Avocado Garden Salad

A refreshing and healthy salad that is quick and easy to prepare with the creamy texture of avocado, a slight crunch from corn kernels with a super healthy dressing of olive oil and lemon juice.

Ingredients

  • 1 ripe avocado peeled and chopped
  • 1 cup cherry tomatoes chopped in halves
  • 1 large cucumber chopped
  • 3 lettuce leaves torn to bite-size pieces
  • 1 small onion finely sliced
  • 1 cup corn kernels cooked or tinned
  • ½ cup chopped coriander leaves

For dressing:

  • 1 tablespoon lemon juice
  • 2 tablespoon olive oil
  • ½ teaspoon grated garlic or 1/4 teaspoon garlic powder
  • ½ teaspoon crushed black pepper
  • ½ teaspoon paprika powder
  • ¼ teaspoon salt

Instructions

  • Combine all the salad ingredients in a large glass bowl and keep it refrigerated until it is served.
  • In a separate bowl combine all ingredients for the salad dressing and mix well. Keep refrigerated.
  • Just before serving, drizzle the salad dressing over the salad and serve chilled.
