Ingredients
1ripe avocado peeled and chopped
1cupcherry tomatoes chopped in halves
1large cucumber chopped
3lettuce leaves torn to bite-size pieces
1small onion finely sliced
1cupcorn kernels cooked or tinned
½cupchopped coriander leaves
For dressing:
1tablespoonlemon juice
2tablespoonolive oil
½teaspoongrated garlic or 1/4 teaspoon garlic powder
½teaspooncrushed black pepper
½teaspoonpaprika powder
¼teaspoonsalt
Instructions
Combine all the salad ingredients in a large glass bowl and keep it refrigerated until it is served.
In a separate bowl combine all ingredients for the salad dressing and mix well. Keep refrigerated.
Just before serving, drizzle the salad dressing over the salad and serve chilled.
