Honey Oats & Flax Seeds Bread

A super healthy and simple recipe for homemade bread with honey, oats and added crunch from flax seeds.

Ingredients

  • 375 grams plain flour/ All-purpose flour/ Maida (3 cups)
  • ¾ cup instant oats
  • 4 tablespoon flax seeds
  • 2 ¼ teaspoon instant yeast
  • 1 teaspoon salt
  • 1 cup milk 250 ml
  • ¼ cup warm water
  • ¼ cup honey
  • 2 tablespoon melted and unsalted butter
  • ¼ cup honey for dough
  • 3 tablespoon honey for topping
  • 2 tablespoon oats for topping

Instructions

  • In a bowl mix together flour, oats, flax seeds, and salt.
  • Heat the milk just till it is warm and not very hot. To this warm milk, add butter, water, honey, and yeast. Cover and set aside for 10 minutes until the yeast gets frothy.
  • Slowly add milk mixture to the flour mixture and keep mixing until the dough starts forming into one single mass. Keep kneading until the dough stops sticking and turns smooth and soft. For doing this you might require some more flour, so just keep adding 1 tablespoon at a time to flour your hands and work surface. But do not exceed more than 5 tablespoons.
  • Place the dough in a bowl that is oiled and set aside to rise for about 45 minutes to 1 hour in a warm place.
  • Once the dough rises, remove it and place it on a floured work surface. Roll out the dough into a large disk of about less than half-inch thickness.
  • Grease a bread baking tin of 8 inches by 4 inches and place the tin next to the disc.
  • Fold the disc from two sides according to the size of the tin. And then roll the dough from the other side which is not folded into a long cylinder. Pinch the edges so that the folds are not seen. See the picture below to see the folding technique.
  • Place the dough into the greased bread tin with folded side down. Cover with a cling wrap and again set aside for 30 minutes or more so that the dough rises just till it is 1/2 inch above the tin.
  • Warm 3 tablespoons of honey in the microwave for a few seconds. Brush this warm melted honey on the surface of the risen bread dough carefully so that you do not form any dents on the dough. Sprinkle 2 tablespoons or less instant oats over the honey.
  • Preheat oven to 180 degrees centigrade for 15 minutes.
  • Once the oven is hot, place an empty baking tin with boiling water inside the oven to form steam while baking.
  • Bake the bread for about 40 to 45 minutes. ( It may take 5 or 10 minutes more according to the size of the oven). To check if the bread is baked well, just tap and it should give a hollow sound. Also when you lift the baking tin, it looks light in weight.
  • Cool the bread on a wire rack completely before cutting it into slices. Use a serrated bread knife for good slices.
