Chicken Frankie

Chicken Frankie is a popular snack served on the streets of Mumbai. A crispy egg coated tortilla stuffed with spicy and tangy chicken filling along with fresh and crunchy salad. Well that sounds like a complete meal and a healthy version of fast food.

Ingredients

For stuffing:

  • 500 grams boneless chicken finely chopped
  • 1 cup sliced onion
  • 1 big tomato sliced
  • 1 tbsp ginger paste/ shredded
  • 1 tbsp garlic paste
  • 1 tsp turmeric
  • 2 tsp red chilli powder
  • 2 tsp roasted cumin powder
  • 2 tsp coriander powder
  • 1 tsp dry mango powder amchoor
  • ¾ tsp salt
  • 2 tbsp each coriander and mint leaves chopped
  • 4 tbsp oil

For the wraps: Makes 10

  • 2 cups plain flour
  • 2 cups wheat flour
  • 1 ½ tsp salt
  • 3 tbsp oil
  • Enough water to make a dough

For Salad: Mix together in a bowl

  • 1 capsicum finely julienned
  • 1 carrot finely julienned
  • 1 cup cabbage finely shredded
  • 1 small onion sliced
  • 1 tsp lemon juice
  • 1 tsp chat masala powder
  • Salt

Instructions

To prepare Chicken stuffing:

  • Heat oil in a saucepan and fry onion till soft. Then add ginger and garlic and saute for 1 min. Now add tomatoes along with all the spice powders and fry well. Add the chicken pieces and cook in spices till done along with salt. When chicken is cooked through add coriander and mint leaves, check the seasoning and turn off the heat.

For making wraps/rotis:

  • Mix all of the above ingredients to a soft smooth dough and rest it for 15min. Make thin tortillas and half roast them on hot pan and set aside.

To make Frankies:

  • Take a tortilla (roti) and place on a hot pan. Spread a thin layer of beaten egg about 1 tbsp over the roti on both sides and cook till u get a golden glaze. Remove from heat.
  • Now take the egg coated roti and spread mint chutney all over. Place 2 tbsp of chicken mixture and some salad and neatly roll the roti and stick the end part with raw egg.
  • Once again place this roll on hot pan and slightly roast on all sides.
  • Serve hot.

Notes

For mint chutney: (Grind to a smooth dry paste)
1 cup fresh coriander leaves chopped
1 cup fresh mint leaves chopped
1 tsp tamarind pulp
1 slice of white bread
2 green chillies chopped
1 tsp ginger garlic paste
Salt to taste
1/2 tsp sugar
