Achari Murg Tikka

A popular appetizer where chicken pieces are marinated in yogurt and a special blend of achari spice mix making it the most delicious and piquant barbecue dish.

Ingredients

  • 1 kilogram boneless chicken cubes
  • 2 tablespoon yogurt
  • 1 tablespoon ginger & garlic paste combined
  • 2 tablespoon achari masala powder
  • 1 tablespoon kasoori methi dried fenugreek leaves
  • 1 tablespoon lemon juice
  • 2 teaspoon chickpea flour besan
  • 1 tablespoon mustard oil or any cooking oil
  • 1 teaspoon salt

Achari Masala Powder

  • 10 dry red chilies I used byadgi
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon fennel seeds Badi Saunf
  • 2 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • ½ teaspoon methi seeds fenugreek seeds
  • ½ teaspoon nigella seeds kalonji
  • 1 teaspoon black salt kala namak
  • 1 teaspoon turmeric powder
  • 2 teaspoon amchoor powder
  • 1 teaspoon hing asafoetida

Instructions

Achari Masala Powder:

  • Dry roast on low flame, dry red chilies, coriander seeds, cumin seeds, fennel seeds (badi saunf), black peppercorns, mustard seeds, nigella seeds, and methi seeds for almost 2 to 3 minutes. Cool and grind to a smooth and fine powder. In a large bowl, mix together, powder from the grinder, black salt, turmeric powder, amchoor powder, hing, and mix well. Store in a dry airtight glass container.

Marinate:

  • In a large bowl add chicken pieces, yogurt, ginger & garlic paste, lemon juice, salt, 2 tablespoon achari masala powder, 1 tablespoon kasoori methi, 2 teaspoon chickpea flour, and 1 tablespoon mustard oil (you can substitute mustard oil with cooking oil or olive oil). Mix well and marinate the chicken pieces for a minimum of 1 hour or you can keep it for 3 to 4 hours.

Grill or Pan Fry:

  • Preheat oven to 250 degrees C and place the chicken pieces on a skewer or just lay flat on a baking dish. Keep the baking dish close to the top flame and cook for 20 to 25 minutes (turn the pieces after 10 minutes).
  • Serve hot as a starter with Mint Chutney or wrapped in a roti as achari roll.

Notes

Not only is the grilled food healthy but it is also very easy to prepare which gets cooked on its own when left in the oven attentively. Once the grilled meat is ready, it again gives us lots of choices like making a kabab roll, or shredded kabab into a nice tikka sandwich. You can also serve it on a bed of rice or on a bowl of salad.
