Ingredients
3medium sized potatoes
1tspcumin seeds
1tspred chilli powder
1tbspcrushed coriander seeds
1tsproasted cumin powder
½tspamchur powderdry mango powder
Salt to taste
1tspsugar
4 to 5tbspoil
2tbspchopped coriander leaves
Instructions
Boil potatoes along with skin till 90 % cooked. Take care not to over boil it. Peel and cut into cubes.
Heat oil in a thick bottom or any non-stick wok. Add cumin seeds and fry till they slightly change colour.
Now add salt. This will prevent the potatoes from sticking to the wok. Along with salt add red chili powder, crushed coriander, roasted cumin powder, sugar, and amchur powder.
Now add the potatoes and stir carefully until fully coated with the spices. You can sprinkle some water in case if the whole thing becomes dry and is sticking to the wok.
Check the seasoning and adjust accordingly.
Finally, add chopped coriander leaves and serve hot.
