Banana and Chocolate Chip Muffins

This is a classic banana chocolate chip muffin recipe which is ready in less than an hour. A very easy and no-fuss recipe where all the ingredients get mixed in a single bowl if you wish and require no cake beater or kitchen machine to prepare the batter.

Ingredients

  • 1 ¾ cups plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon powder
  • ¼ teaspoon salt
  • 3 large ripe bananas about 1 1/2 cups
  • ¾ cup of sugar
  • 80 ml of melted butter 1/3 rd of a cup
  • 1 tsp vanilla essence
  • ¼ cup milk at room temperature
  • 1 large egg
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 180 degrees C (350 degrees F). Arrange muffin cases in a muffin tray. Small size cups will yield 10 muffins and large size cups or cases will yield 6 muffins.
  • Mix dry ingredients in a separate bowl – plain flour, baking soda, baking powder, cinnamon powder, and salt.
  • In a large bowl, mash 3 ripe bananas which should be around 1 and a half cups or slightly more. To this add melted butter and sugar. Mix for 2 minutes till all the sugar is dissolved.
  • Then add rest of the ingredients – egg, milk, and vanilla essence and mix well.
  • Now add the dry ingredients to the mashed bananas mixture and mix well.
  • Finally, add chocolate chips which can be anywhere between 1/2 cup and 1 cup. (I have added 1/2 cup)
  • Pour the batter evenly and fill almost 3/4 portion of the muffin cases. Sprinkle some more chocolate chips on top of the batter.
  • Bake for 25 – 30 minutes. After 25 minutes, insert a clean knife in the center of a muffin which should come out clean. If not, bake for 5 – 7 minutes more.
  • Once baked, cool completely before serving.

Notes

Note: Bananas have to be over ripe and soft. Firm bananas will not give the same effect. All ingredients should be at room temperature.
