Banana Bread

A very easy and quick way of making banana flavored bread which almost tastes like a cake ideal for serving as breakfast or to be enjoyed with tea or coffee.

Ingredients

  • 125 grams butter at room temperature/soft)
  • 1 cup castor sugar
  • 2 cups flour
  • 2 eggs
  • 3 large ripe bananas mashed
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • ΒΌ tsp baking soda

Instructions

  • Preheat oven to 180 deg C.
  • With a cake beater beat butter and sugar together till fluffy and light. Add eggs one at a time and beat well.
  • Add bananas and vanilla, mix well .
  • With a ladle mix in flour, baking powder, and baking soda. Pour the batter into a greased loaf tin and bake for 30 to 40 min.
  • When the bread is done, cool it for 15 min and then slowly make slices with a serrated knife. (if you start making slices when it is hot, it may crumble)
  • Tips: If you do not have castor sugar, take regular granulated sugar and grind it in a spice grinder to a fine powder. Mash bananas just before adding to the batter.
