Try this super easy and delicious Bombay-style grilled vegetable sandwich in the comfort of your home. This sandwich is loaded with vegetables and cheese along with spicy chutneys, perfect for packing for lunch boxes too.

Ingredients
For Sandwich:
16slicesof sandwich bread
50gramsbutteror less
1cupgreen mint chutney
¾cupspicy red chutney
For Vegetable Stuffing: (mix together)
1& 1/2 cup boiled & mashed potato2 medium size potatoes
1cupgrated cheddar cheese
1finely chopped onion
1finely chopped tomato
1finely chopped capsicumgreen bell pepper
1teaspoonchat masala powder
For Green Mint Chutney: (Grind to a smooth paste)
2cupschopped mint leaves
2cupschopped coriander leaves
2tablespoonroasted chana dalready to eat snack type
1teaspoonchopped garlic
1teaspoonchopped ginger
2green chilies choppedas per taste
1teaspoontamarind pulpor 1 tablespoon lemon juice
1teaspooncumin seeds
1teaspoonsalt
1teaspoonsugar
2 to 3tablespoonof water for grinding
For spicy red chutney: (Grind to a smooth paste)
1large tomato
3 to 4dry red chiliesor 2 teaspoons red chili powder
1teaspoonchopped garlic
¼teaspoonsalt
Instructions
Preheat a sandwich toaster or a pan.
Take 2 slices of white sandwich bread and apply green chutney on one slice and red chutney on the other slice.
Take a big spoonful of the vegetable stuffing mixture and spread it on the slice with green chutney.
Place the other slice on top and spread butter on the outer layer of the bread.
Repeat steps 1, 2, 3, and 4 with the rest of the bread slices to make around 8 to 10 sandwiches.
Now toast the sandwiches on both sides till crisp and golden.
Serve hot.

Notes
1 cup = 250 ml You can make the stuffing and chutneys in advance and store it in a refrigerator. Assemble the sandwich just before serving. You can also add grated paneer instead of grated cheese and then keep a cheese slice in the bread.
