Chicken and Cheese Paratha

Chicken and Cheese Paratha is a breakfast dish where whole wheat roti is stuffed with spicy chicken stuffing and grated cheese.

Ingredients

For chicken filling

  • 1 cup boiled shredded chicken
  • 1 small onion chopped
  • 1 small tomato chopped remove seeds
  • ½ carrot grated
  • ½ teaspoon ginger & garlic paste
  • ½ teaspoon red chili powder
  • ¼ teaspoon turmeric
  • ½ teaspoon pepper
  • ¼ cup chopped fresh coriander leaves
  • 1 tsp lemon juice
  • Salt to taste

For the dough: (combine all ingredients to make a smooth soft dough)

  • 2 cups wheat flour
  • 1 tbsp oil
  • Salt to taste
  • Water as required to make the dough

Instructions

For Chicken Stuffing

  • Heat 4 tbsp cooking oil in a saucepan and fry onion until soft and pink. Now add ginger garlic paste and saute for a minute. Then add tomatoes, cooked chicken and rest of the ingredients. Let it fry for 2 to 3 minutes on slow flame or until the raw smell disappears. Add few drops of water if needed. Set aside to cool.

For the paratha

  • Take chappati dough and roll out two similar size medium chapatis.

To Assemble

  • Place the filling on one chappati, sprinkle some cheese and place another chapati on top of it.
  • Again roll out with both chappatis intact so that the filling gets pressed and merged with the dough.
  • Cook the paratha on a hot pan with oil till golden and crispy on both sides.
  • Cut into 4 pieces and serve hot with sour cream, mint chutney, raita etc.
