Chicken in Garlic Sauce

Chicken in Garlic Sauce is a curry served with fried rice or fried noodles prepared in an Indo-Chinese style.

Ingredients

For the marinade:

  • 500 grams boneless chicken cubes
  • 1 tsp garlic & ginger paste each
  • ½ tsp salt
  • 1 tsp pepper
  • 1 egg
  • 3 tbsp cornflour

For the Sauce:

  • 4 tablespoon finely chopped garlic 6-7 big size garlic
  • 1 tbsp chopped white portion of spring onion
  • ½ cup chopped green spring onion.
  • 1 medium size capsicum chopped in cubes
  • 2 tsp chili powder
  • 2 small cups of chicken stock/water
  • 2 tbsp tomato sauce
  • 1 tbsp tomato puree
  • 1 tablespoon soy sauce
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp vinegar
  • 3 tsp cornflour mixed with 1/2 cup water

Instructions

  • Mix all the above ingredients together and keep covered for about 1 hr. Deep fry chicken pieces in medium hot oil and set aside.
  • Heat 2 tbsp oil in a small wok and fry garlic until light golden. Then add chopped onion, capsicum along with fried chicken pieces and fry for 1 min on high heat.
  • Lower the heat and add rest of the ingredients – red chili powder, tomato sauce, tomato puree, soy sauce, sugar, 2 cups water, and vinegar. Add salt only if needed.
  • Bring to a boil and slowly add cornflour mixture little by little according to the thickness you need.
  • Cook for a couple of minutes and finally add chopped green spring onion.
