Chicken Shami Kabab

Chicken Shami Kabab is an Indian style kabab where cooked chicken is combined with lentils and spices, shaped into a patty and shallow fried.

Ingredients

To cook chicken:

  • 500 grams boneless chicken pieces
  • ½ cup chana dal washed & soaked
  • 1 tbsp chopped ginger
  • 1 tbsp chopped garlic
  • 1 medium onion chopped
  • 2 tablespoon Shami Kabab Spice Mix
  • Salt to taste
  • 250 ml water

Other ingredients: (to be added after chicken is cooked)

  • 1 medium-size potato boiled and mashed
  • 2 green chilies chopped
  • ½ cup chopped green coriander leaves
  • ½ cup mint leaves chopped
  • 1 tbsp lemon juice
  • 1 egg

Shami Kabab Spice Mix:

  • 20 dry red chilies
  • 3 tablespoon coriander seeds
  • 2 tablespoon cumin seeds
  • 1 tablespoon black peppercorns
  • 2 teaspoon shahi jeera caraway seeds
  • 1 teaspoon methi seeds
  • 10 green cardamom
  • 2 brown cardamom
  • 3 pieces of cinnamon 1 inch each
  • 10 cloves
  • 2 pieces of mace
  • 3 bay leaves
  • ½ teaspoon grated nutmeg

Instructions

  • Dry roast the ingredients for Shami Kabab Spice mix in a hot pan for 2 minutes on medium heat. Remove from heat, cool and grind to a fine powder. Store in an airtight container.
  • Heat cooking oil in a saucepan and fry chopped ginger, garlic, and onion for 5 minutes till onion is soft and pink.
  • Then add chicken pieces, soaked chana dal,2 tablespoon of Shami Kabab Spice Mix, salt, and water.
  • Cover and cook for 15 to 20 minutes or till chicken is fully done and water has dried up.
  • Remove from heat, let the chicken mixture cool down and blend it in a chopper to a smooth dough.
  • Remove the kabab mixture in a large bowl and add the other ingredients and mix well.
  • Take a handful of the mixture, form into kababs of desired shapes and shallow fry.
  • Serve hot with mint chutney.
