Dry roast the ingredients for Shami Kabab Spice mix in a hot pan for 2 minutes on medium heat. Remove from heat, cool and grind to a fine powder. Store in an airtight container.
Heat cooking oil in a saucepan and fry chopped ginger, garlic, and onion for 5 minutes till onion is soft and pink.
Then add chicken pieces, soaked chana dal,2 tablespoon of Shami Kabab Spice Mix, salt, and water.
Cover and cook for 15 to 20 minutes or till chicken is fully done and water has dried up.
Remove from heat, let the chicken mixture cool down and blend it in a chopper to a smooth dough.
Remove the kabab mixture in a large bowl and add the other ingredients and mix well.
Take a handful of the mixture, form into kababs of desired shapes and shallow fry.
Serve hot with mint chutney.
