Chinese Chicken Gravy That Pairs Well with Fried & Noodles
Chinese Chicken gravy is a basic Chinese curry to be served with fried rice or any kind of fried noodles. Boneless chicken pieces and first batter fried and then cooked in cornflour based curry with lots of flavors from ginger and garlic and other spices.

Ingredients
For Fried Chicken
500gramsboneless chickencut into small pieces
Oil for deep frying
For marinade:
1egg
1tspeach ginger garlic paste
1tspblack pepper
1tbspsoya sauce
1tbspvinegar
1tspsalt
1cupcornflour for coating
For gravy:
2cupschicken stock/ water/ stock cube water
½cupwater + 3 tbsp cornflourmixed together
1tbspchopped garlic
1tbspchopped ginger
1tbspchopped green chilli
2tbspchopped white spring onion
1tbspsoy saucedark
1tspsugar
1tbspvinegar
1tspblack pepper
Salt to taste
Instructions
For Fried Chicken
Marinade boneless chicken cubes with salt, pepper, ginger garlic paste, soy sauce, vinegar and egg for about 30 min or 1 hr.
After 1 hr of marination dip each chicken piece into the cornflour and deep fry till cooked and set aside.
For the Chinese Gravy
Heat 3 tbsp of oil in a wok. Add grated ginger, garlic and green chilies. Once they turn light golden (do not burn) add spring onion and saute well.
Add chicken stock, soy sauce, vinegar, sugar, salt, and pepper. Bring to a boil and slowly add the cornflour mixture. Lower the heat and once the gravy starts to thicken add the fried chicken pieces and stir well.
Continue cooking on low heat for 2 more min and check the seasoning again and adjust if needed.
Remove from the flame and pour into a serving dish and garnish with green spring onion chopped.
