Homemade Vada Pav

A popular Indian street style fast food, where deep-fried potato cutlets are stuffed into chutney smeared spicy buns.

Ingredients

  • 4 small buns
  • 4 tablespoon garlic chili sauce
  • Oil for deep frying

For vada:

  • 2 cups boiled and mashed potatoes
  • 1 teaspoon each ginger garlic & green chili paste
  • 1 teaspoon urad dal optional
  • 1 teaspoon mustard seeds
  • 5 curry leaves chopped
  • ¼ teaspoon turmeric powder
  • 1 tablespoon oil
  • Salt to taste

For Batter: (Mix together in a bowl)

  • 2 cups gram flour
  • 1 teaspoon rice flour
  • Salt to taste
  • ¼ teaspoon chili powder
  • ¼ teaspoon roasted jeera powder
  • Enough water to make a smooth batter

For mint chutney: (grind together)

  • 1 teaspoon grated garlic
  • 1 teaspoon grated ginger
  • 2 green chilies
  • 1 teaspoon lemon juice
  • 1 cup mint leaves
  • 1 cup green coriander
  • 1 slice of bread soaked in water
  • ½ teaspoon salt

Instructions

To make vada

  • In a bowl add mashed potatoes, garlic, ginger, green chili paste and salt mix well and keep aside.
  • Heat oil in a pan add urad daal, mustard seeds curry leaves and turmeric, when tempered well add this to the mashed potatoes and mix well.
  • Make small lemon size balls dip into the batter and deep fry till light golden.
  • Remove on a kitchen towel for excess oil to drain.

For the vada pav

  • Take each bun and make a slit horizontally.
  • Apply chili sauce on one side and mint chutney on other side and keep the fried vada in middle and serve hot.
