Homemade Vada Pav
A popular Indian street style fast food, where deep-fried potato cutlets are stuffed into chutney smeared spicy buns.

- 4 small buns
- 4 tablespoon garlic chili sauce
- Oil for deep frying
For vada:
- 2 cups boiled and mashed potatoes
- 1 teaspoon each ginger garlic & green chili paste
- 1 teaspoon urad dal optional
- 1 teaspoon mustard seeds
- 5 curry leaves chopped
- ¼ teaspoon turmeric powder
- 1 tablespoon oil
- Salt to taste
For Batter: (Mix together in a bowl)
- 2 cups gram flour
- 1 teaspoon rice flour
- Salt to taste
- ¼ teaspoon chili powder
- ¼ teaspoon roasted jeera powder
- Enough water to make a smooth batter
For mint chutney: (grind together)
- 1 teaspoon grated garlic
- 1 teaspoon grated ginger
- 2 green chilies
- 1 teaspoon lemon juice
- 1 cup mint leaves
- 1 cup green coriander
- 1 slice of bread soaked in water
- ½ teaspoon salt
To make vada
In a bowl add mashed potatoes, garlic, ginger, green chili paste and salt mix well and keep aside.
Heat oil in a pan add urad daal, mustard seeds curry leaves and turmeric, when tempered well add this to the mashed potatoes and mix well.
Make small lemon size balls dip into the batter and deep fry till light golden.
Remove on a kitchen towel for excess oil to drain.
