Kadhai Paneer

Paneer or cottage cheese cubes cooked in a wok with tomato and onion based gravy along with other spices.

Ingredients

  • 250 grams paneer
  • 1 tablespoon grated garlic
  • 1 tablespoon grated ginger
  • 1 teaspoon cumin seeds
  • 1 medium size onion roughly chopped
  • 1 medium size tomato chopped
  • 1 small capsicum chopped into cubes
  • 1 small onion chopped in cubes
  • 2 green chilies chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon crushed kasoori methi
  • 1 tablespoon tomato puree +1 tbsp yogurt mixed together
  • 1 tablespoon tomato sauce
  • ¼ teaspoon garam masala
  • 1 tablespoon fresh cream
  • 1 tablespoon chopped pudina mint
  • 1 tablespoon chopped coriander
  • Salt to taste
  • 3 tablespoon oil + 1 tablespoon butter

Instructions

  • Heat oil and butter in a pan. Add cumin seeds and let it crackle.
  • Now add ginger and garlic and fry for few seconds till aromatic.
  • Then add onion along with green chilies and fry till onions are soft and pink.
  • Add tomatoes and cook till oil separates. Now add spices like turmeric powder, coriander powder, red chili powder, kasoori methi, and a mixture of tomato puree and yogurt. Stir well and add capsicum and onion cubes.
  • Place the lid and cook along with salt on a low flame. In this dish, we don’t have to add any water so try to keep the flame low.
  • Avoid overcooking of capsicum, so accordingly open the lid and add tomato sauce, paneer cubes, and garam masala powder.
  • Stir well and finally add fresh cream, chopped mint
