Paneer Bhurji

Indian style curry with a blend of spices and grated cottage cheese served best with roti or naan.

Ingredients

  • 200 grams paneer cottage cheese
  • 2 tablespoon garlic finely chopped
  • 2 big tomato peeled and chopped
  • 3 green chilies with slits
  • ¼ teaspoon turmeric powder
  • 1 ½ teaspoon roasted cumin powder
  • 1 teaspoon red chili
  • ¼ teaspoon garam masala powder allspice
  • 2 tablespoon kasoori methi dried fenugreek leaves
  • 1 tablespoon tomato ketchup
  • ½ cup cream
  • 2 tablespoon green coriander leaves chopped
  • 2 tablespoon oil
  • 1 tablespoon butter + 1tablespoon for garnishing
  • 1 teaspoon salt

Instructions

  • Grate the paneer coarsely (not fine) and set aside.
  • Heat oil in a saucepan and fry garlic till aromatic and then add tomatoes and green chilli. Cook till tomatoes melt completely.
  • Add all the spices like turmeric, cumin, and red chili powder. Stir well and add kasoori methi and tomato ketchup. Roast the masala well and some water if needed. Add salt at this stage and check other seasonings. If u feel u need it spicier then u can add more green chili.
  • After cooking the masala for 2 to 3 min add grated paneer and gently stir until well combined with all spices.
  • Finally add cream, garam masala and fresh coriander chopped. Cook for a couple of minutes on low flame and serve hot with naan or grilled bun.

Notes

variations: Palak paneer bhurji : You can try adding finely chopped spinach or fresh fenugreek leaves after step 3.
Mix veg & Paneer bhurji: Just add 1/2 cup frozen mix vegetables after step 3 and cook till veggies are done.
