Ingredients
For Potato Bhaji:
3medium size potatoes
2medium onionfinely chopped
1pieceginger1 inch
3green chilies
7curry leaves
1tbspurad dal
2tspcumin
2dry red chilies
¼tspturmeric powder
¼cupchopped coriander leaves
4tbspcooking oil
Salt to taste
For Green Chutney:
1cupfresh grated coconut
1small piece of ginger grated
1cloveof garlic chopped
1green chili chopped
½tspcumin whole
1tspfull tamarind pulpor 1/4 cup tamarind soaked juice
3tbsproasted chana dalsnack dal
1cupfresh coriander leaves chopped1 cup
¾tspsalt
4curry leaves
Other ingredients:
8slicesof bread
2cupspotato bhaji
1cupgreen chutney
4skicescheeseCheddar or according to your preference
4tbspof sesame seeds
4tbspcooking oil for frying.
Instructions
For chutney:
Grind all the above ingredients with a half cup of water to a smooth paste.
For potato bhaji:
In a pressure cooker, boil 3 medium size potatoes. No need to peel or cut. Once it is cooked, peel and mash the potatoes.
While the potatoes are getting cooked, you can prepare the tadka and keep ready.
For Tadka (tempering):
Heat oil in a saucepan and add 1 tbsp urad dal and 2 tsp cumin seeds. When it starts crackling and changes color, add 2 dry red chilies, chopped ginger, green chilies, and curry leaves.
After a minute, add 2 medium onion roughly chopped, and fry till they just soften, do not brown the onion.
Add 1/4 tsp turmeric and fry for a few seconds till well combined with onion.
Add the mashed potatoes and mix well.
Finally add salt and chopped coriander. And cook for 2 minutes and remove from the heat.
For preparing the toast:
Heat a pan with few spoons of oil.
Take a slice of bread and spread 1 tsp of chutney.
Sprinkle some grated cheese or pieces of the cheese slice.
Spread 2 tbsp of potato bhaji and sprinkle sesame seeds.
Now shallow fry the bread slice with filling side down.
Cook on medium flame for 3 minutes and slowly turn the slice over and cook on the other side till the bread slices are crisp.
