Methi Chicken is an Indian style curry which is easy and quick to prepare, where chicken is cooked along with fresh fenugreek leaves and other spices, served hot with roti or rice.
800gramschicken with or without bonescut into small size pieces
2cupsof methi leavesfenugreek (discard the stem)
½cupcreamoptional
¾cupfried onion(made with 2 large onion)
½cupchopped coriander leaves
5tbspof cooking oil / ghee
For Marinade:
3tbspof yogurt
1tbspginger & garlic paste
1tbspred chili powderas per taste
¼tspturmeric powder
2tspcumin powder
2tspcoriander powder
¼tspgaram masala powder
1tbsplemon juice
1tspsaltor as required
Instructions
Clean the chicken and mix all the ingredients in a large bowl. Marinate chicken pieces in it for about 30 minutes (1 or 2 hours is also fine).
Heat 5 tbsp of oil in a thick bottom non-stick pan. Add marinated chicken and fry for 2 minutes on high heat.
Turn the flame on low and cook the chicken covered till almost done. (This will take about 15 to 20 minutes)
After 15 minutes of cooking the chicken, add chopped methi leaves and stir well. Cook for 5 to 10 minutes more and add 1/2 cup cream and 3/4 cup fried onion. Stir well and cook for another 5 minutes.
Add chopped coriander leaves, taste and adjust the seasoning and serve hot with roti or naan. If you wish to have it with rice then you can add some water and adjust the consistency accordingly.
