Szechuan Hot & Sour Soup is an Indo-Chinese style of making chicken soup with spicy and sour flavors.

Ingredients

  • 200 grams boneless chicken finely chopped
  • 2 tbsp garlic finely chopped
  • 1 tbsp soya sauce dark
  • 2 tbsp red chili sauce or Chings Szechuan Sauce
  • 1 tbsp tomato puree
  • 2 tbsp tomato sauce
  • 1 tsp brown sugar or white sugar
  • 1 tsp chili flakes
  • 1 tbsp white vinegar
  • ¼ tsp black pepper powder
  • 2 tbsp cornflour dissolved in half cup water
  • ½ tsp salt
  • 1 egg white whisked optional
  • ½ cup chopped green spring onion
  • 3 cups homemade chicken stock or (dissolve 1 knorr chicken stock cube with 4 cups of water.)

Instructions

  • Heat oil in a sauce pan and fry chopped garlic till the raw smell disappears and color changes slightly.
  • Add finely chopped boneless chicken pieces along with salt and pepper powder and fry till chicken is well cooked.
  • Now add soya sauce, red chili sauce, tomato puree, and tomato sauce. Lower the heat, add 4 cups chicken stock and cook on low flame for 2 minutes.
  • Add brown sugar, chili flakes, and vinegar.
  • To thicken the soup add cornflour mixture little by little till you get the consistency of your choice.
  • You can add beaten egg white in a thin stream and keep stirring as you add. Adding egg is optional, you can prepare soup even without it.
  • Garnish with lots of green chopped spring onion and serve hot.
