Tomato Cheese and Chutney Sandwich

A simple sandwich made with minimal ingredients ideal for those kids who are too fussy about eating. Perfect for packing as a lunch box or as breakfast.

Ingredients

  • 2 slices of bread
  • 1 tomato
  • 1 cheese slice
  • 1 tbsp mayonnaise
  • 2 tbsp mint chutney

Mint Chutney (grind together)

  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • 2 green chillies
  • 1 tsp lemon juice
  • ½ tsp salt
  • 1 cup mint leaves
  • 1 cup green coriander
  • 1 slice of bread torn into pieces

Instructions

  • Spread mayonnaise on 1 slice of the bread.
  • Place a slice of tomato and cheese.
  • Spread chutney on the other slice of bread and place it over the tomato & cheese.
  • Cut the sandwich into 4 pieces.
