Vegetable Sandwich | Carrot & Capsicum Sandwich

A sandwich made with a spicy preparation of cooked carrot and capsicum stuffing along with some cheese and fresh vegetables.

Ingredients

  • 1 large carrot julienned
  • 1 capsicum sliced
  • 1 medium onion sliced
  • ½ teaspoon ginger & garlic paste
  • ½ teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • ½ teaspoon pepper powder
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 4 tablespoon oil

Instructions

For Vegetable Stuffing:

  • Heat oil in a saucepan and saute chopped onion until soft. Then add ginger & garlic paste, red chili powder, turmeric powder, cumin powder, and fry on low flame for 3 or 4 minutes or till the raw smell disappears. Now add carrot, capsicum, salt, black pepper powder, and lemon juice. Cook on medium heat till vegetables are just cooked. Turn off the heat and make sure that the vegetable mixture is dry. Set aside to cool.

For Sandwich

  • Take a slice of bread and spread 1 teaspoon or less mayonnaise. Spread 1 tablespoon of vegetable mixture and arrange tomato, capsicum, or any vegetables of your choice. Sprinkle chopped jalapeno. Place a slice of cheese on top and place a slice of bread on top. Apply butter over the sandwich and toast the sandwich on a grill pan or a non-stick pan. Serve hot and crispy.
