A popular Indian style preparation of okra stuffed with flavorful spicy stuffing, and shallow fried till crispy from outside and soft from inside. It is best served as a side dish or as an appetizer.

Ingredients
400gramsladies finger/ bhindi
For stuffing (mix together in a bowl)
2tablespoonchickpea flour - roasted
¼cuppeanuts - roasted
1small onion finely minced
2tablespoonfinely chopped garlic
3green chilies finely choppedor as per taste
¼cupchopped coriander leaves
3tablespoongrated coconut
1teaspoonred chili powder
2teaspooncoriander powder
1teaspoonroasted cumin powder
3teaspoonamchoor powderdry mango
For tadka (tempering)
1teaspoonhing powderasafoetida
1teaspoonwhole cumin
5tablespooncooking oil
1teaspoonsalt to taste
Instructions
Wash the okra, pat dry completely by wiping each of them with a cloth.
Cut off both the ends and make a slit lengthwise. (as shown in the picture below)
Mix all the ingredients for stuffing in a bowl and stuff it into the lady's finger.
Heat oil in a flat pan and add whole cumin. When it splutters, add hing.
Lay the stuffed ladyfingers on the pan side by side. Cook for 15 to 20 minutes by rotating them so that the vegetables are evenly cooked on all sides till golden brown and crisp from outside.
