A popular Indian style preparation of okra stuffed with flavorful spicy stuffing, and shallow fried till crispy from outside and soft from inside. It is best served as a side dish or as an appetizer.

Ingredients
  

  • 400 grams ladies finger/ bhindi

For stuffing (mix together in a bowl)

  • 2 tablespoon chickpea flour - roasted
  • ¼ cup peanuts - roasted
  • 1 small onion finely minced
  • 2 tablespoon finely chopped garlic
  • 3 green chilies finely chopped or as per taste
  • ¼ cup chopped coriander leaves
  • 3 tablespoon grated coconut
  • 1 teaspoon red chili powder
  • 2 teaspoon coriander powder
  • 1 teaspoon roasted cumin powder
  • 3 teaspoon amchoor powder dry mango

For tadka (tempering)

  • 1 teaspoon hing powder asafoetida
  • 1 teaspoon whole cumin
  • 5 tablespoon cooking oil
  • 1 teaspoon salt to taste

Instructions
 

  • Wash the okra, pat dry completely by wiping each of them with a cloth.
  • Cut off both the ends and make a slit lengthwise. (as shown in the picture below)
  • Mix all the ingredients for stuffing in a bowl and stuff it into the lady's finger.
  • Heat oil in a flat pan and add whole cumin. When it splutters, add hing.
  • Lay the stuffed ladyfingers on the pan side by side. Cook for 15 to 20 minutes by rotating them so that the vegetables are evenly cooked on all sides till golden brown and crisp from outside.
  • Serve hot with Dal and Steamed Rice.
