A simple cheese sandwich with a chicken, mushroom and capsicum stuffing, grilled with butter to make it crispy.

Ingredients
10slicessandwich bread
½cupmayonnaiseor as needed
200gramsgrated cheddar cheese
100gramsbutter for toasting
For the Chicken Stuffing:
1cupboiled and shredded chicken
1cupchopped mushrooms
1capsicum chopped
1small onion chopped
1teaspoonginger and garlic pastecombined
1teaspoonblack pepper powder
½teaspooncumin powder
¼teaspoonturmeric powder
2teaspoonsoy sauce
1green chili choppedoptional
¼cupchopped coriander leaves
¾tspsalt
3tablespooncooking oil
Instructions
Heat oil in a saucepan and fry onion until soft.
Add ginger garlic paste and fry for 1 minute.
Add mushrooms and capsicum and fry till cooked.
Now add rest of the ingredients – chicken, turmeric, black pepper, salt, cumin powder, soy sauce, green chili and coriander leaves. Saute for 2 minutes, remove from fire and cool.
Take a slice of bread and spread mayonnaise. Place the chicken mixture on one slice. Sprinkle grated cheese on top and cover it with another slice.
Spread butter on the top part of the sandwich and toast on a hot pan or in a grill.
