Chicken Mushroom & Cheese Sandwich

Chicken Mushroom & Cheese sandwich is a complete meal that can be enjoyed as a breakfast, lunch, snack, or dinner. It is made with a generous amount of cheese and a large stuffing of chicken, mushroom, onion, and capsicum served with bread of your choice.

Before writing anything I want to let you know that I have revised this post with a new video and fresh pictures of the sandwich, just to avoid any confusion have a look at the old picture of this sandwich.

There is something about sandwiches that makes us curious to know what kind of stuffing it has. There is no need of grabbing a fork or a spoon or even a plate for that matter. Just sit cozily in a corner and enjoy the complete meal without the fuss of spilling anything on yourself. This is the reason why I love sandwiches, as it is such a versatile meal.

These types of sandwich stuffings happen instantly in my kitchen when I try to make something with the ingredients available in my refrigerator. Nothing is planned here, nor there is any specific recipe that I follow. And these are the ingredients that you will always find in the kitchen, as you can make so many dishes if you have boiled and shredded chicken in the freezer. Just because I love mushrooms so much that I make sure I buy them regularly and the same goes for capsicum.

Chicken Mushroom & Cheese Sandwich

A simple cheese sandwich with a chicken, mushroom and capsicum stuffing, grilled with butter to make it crispy.

Ingredients
  

  • 10 slices sandwich bread
  • ½ cup mayonnaise or as needed
  • 200 grams grated cheddar cheese
  • 100 grams butter for toasting

For the Chicken Stuffing:

  • 1 cup boiled and shredded chicken
  • 1 cup chopped mushrooms
  • 1 capsicum chopped
  • 1 small onion chopped
  • 1 teaspoon ginger and garlic paste combined
  • 1 teaspoon black pepper powder
  • ½ teaspoon cumin powder
  • ¼ teaspoon turmeric powder
  • 2 teaspoon soy sauce
  • 1 green chili chopped optional
  • ¼ cup chopped coriander leaves
  • ¾ tsp salt
  • 3 tablespoon cooking oil

Instructions
 

  • Heat oil in a saucepan and fry onion until soft.
  • Add ginger garlic paste and fry for 1 minute.
  • Add mushrooms and capsicum and fry till cooked.
  • Now add rest of the ingredients – chicken, turmeric, black pepper, salt, cumin powder, soy sauce, green chili and coriander leaves. Saute for 2 minutes, remove from fire and cool.
  • Take a slice of bread and spread mayonnaise. Place the chicken mixture on one slice. Sprinkle grated cheese on top and cover it with another slice.
  • Spread butter on the top part of the sandwich and toast on a hot pan or in a grill.
