Preheat oven to 180 degrees C (350 F). Line a large baking tray with butter paper.
In a large bowl, mix together rolled oats, chopped almonds, desiccated coconut, and pumpkin seeds.
In another bowl, mix all the wet ingredients like maple syrup, coconut oil, vanilla essence along with cinnamon powder and salt. Stir well and add this mixture to the oats and nuts. Combine everything well and spread the mixture on the baking tray evenly.
Bake for 10 minutes and halfway through, stir the granola mixture in the baking tray so that it gets baked evenly. Return the baking tray to the oven and bake for another 10 to 15 minutes, or until it gets a light golden color.
Remove the tray from the oven and cool it completely until it comes to room temperature.
Finally, add the goji berries, or if you wish you can also add black raisins, chopped dry dates, or even chocolate chip at this stage. Mix well and store in an airtight container (Do not store hot or warm granola in the container, wait until it has completely cooled down).
Serve as breakfast with yogurt, honey, and fruits in a bowl or simply serve this granola mixed with milk.
